STARTER CULTURE FOR QUALITY WHITE AND ROSÉ WINE FERMENTATION

1/17 SO is the result of a selection process aimed at achieving ecological, oenological and biotechnological objectives, in order to offer wineries indigenous yeast cultures that take into account the specific sensory properties of Italian products.

The strain was selected in the Soave area for its finesse and quality characteristics and is suitable for the vinification of white and rosé wines.

It has a short lag phase and a steady, non-tumultuous fermentation kinetics. It does not produce reductive sulphur compounds or sulphur dioxide, and contributes good aromatic complexity without interfering with the delicacy of the primary aromatic component. It also shows low production of foam and volatile acidity. For use, comply with the applicable legal regulations in force.
