The system consists of a membrane that separates the alcoholic liquid from an extractant (usually water). The wine itself is not filtered; only the alcohol fraction is transferred into the extractant through surface flux, resulting in the migration of ethanol molecules via a combination of diffusion and natural osmosis. The membrane is made of a polymer with no electrical charge, selected to be inert and to preserve the color and structure of the original wine. This system is used to treat wine, beer, or other hydroalcoholic solutions.
