EXCELLENT READY-TO-USE STARTER CULTURE FOR SPATKLING WINE FERMENTATION.
SC-S44 is the result of a selection process aimed at achieving ecological, oenological and biotechnological objectives, in order to offer wineries indigenous yeast cultures that take into account the specific sensory properties of Italian products. Our cultures represent valid alternatives to those currently available on the market, which are standardised and limited in number.
In particular, the main strains for secondary fermentation currently available on the market were isolated in France based on the quality characteristics of Champagne. SC-S44 contains a yeast strain selected in Italy from Glera (Prosecco) grapes and is particularly effective in enhancing the fruity and floral aromas of white grape varieties.
SC-S44 is an excellent yeast strain, specially selected for conducing the secondary fermentation either in pressurised tanks,(Charmat method) and for champenoise method. The specific production method of this strain, permits a direct inoculation in basic wine, evoidig the preparation process of a traditional pied de cuve.. It shows high fermentation vigour even at low temperatures. It also has low production of sulphur compounds, foam and volatile acidity.
