STARTER CULTURE FOR QUALITY WHITE WINE FERMENTATION

SC-GW is the result of a selection process aimed at achieving ecological, oenological and biotechnological objectives, in order to offer wineries indigenous yeast cultures that take into account the specific sensory properties of Italian products. Our cultures represent valid alternatives to those currently available on the market, which are standardised and limited in number, and risk leading to taste uniformity while compromising the most fascinating qualities of the ecosystem and terroir in which the grape varieties grow.

The strain was selected from Cortese grapes in the Gavi area and shows excellent suitability for the primary fermentation of quality white musts: Falanghina, Gavi, Chardonnay, Sauvignon, Riesling, Vermentino and Vernaccia.

It has a short lag phase and delivers fast, steady and non-tumultuous fermentation kinetics, with clean and precise finishes. It does not produce sulphur compounds that could interfere with aromatic expression; on the contrary, it enhances the freshness and pleasant floral character of the finished product, supporting the typical traits of the grape variety. Strong enhancement of thiol notes.
