STARTER CULTURE FOR THE VINIFICATION OF RED, VARIETAL, AROMATIC AND SEMI-AROMATIC MUSTS

SC-BAM01 is the result of a selection process aimed at achieving ecological, oenological and biotechnological objectives, in order to offer wineries indigenous yeast cultures that take into account the specific sensory properties of Italian products.

This strain is suitable for the production of still wines, including red, rosé and white wines. It is characterised by a high production of very fruity wines, good polysaccharide production and excellent colour preservation.

The strain was selected from Brachetto grapes for its metabolic activity, which is oriented towards the production of esters and other secondary aromatic compounds. It is suitable for the vinification of red wines such as Sangiovese, Cabernet Sauvignon, Pinot Noir, Merlot, Montepulciano and Barbera.

It has also shown remarkable results on aromatic and semi-aromatic musts from varieties such as Moscato, Traminer, Malvasia, Sauvignon, Riesling and Verdicchio.
