Nextzyme Filtra is composed of an enzyme pool with beta-glucanase activities that cleave the β-1,3 and β-1,6 glucosidic bonds of macromolecules present in wines. This strong action degrades glucans produced by Botrytis, reducing viscosity and improving the filtrability of wines and lees. Beta-glucanase activity also promotes the release of mannoproteins from yeast cell walls during ageing in contact with fine lees.
