Next Libra UMA is a yeast derivative extremely rich in nucleotides naturally present in the Saccharomyces cell. The addition of very low dosages, 2–4 g/hl, results in a clear improvement in wine sapidity and taste persistence. In sparkling wines, with a slightly higher dosage, 8–10 g/hl, it provides a sensation of long ageing on the lees, typical of the traditional method and long Charmat process.
