At the end of the 1990s, Saucier and Glories of the University of Bordeaux demonstrated how parietal polysaccharides, namely mannoproteins, react with anthocyanins and tannins.
Beyond the theory, MannoNext Red is one of those products that truly makes a difference. When used during alcoholic fermentation, the red wine becomes rounder and the colour is protected. The product is also suitable for use during wine ageing.
