Our cultures represent valid alternatives to those currently available on the market, which are standardised and limited in number, and risk leading to taste uniformity while compromising the most fascinating qualities of the ecosystem and terroir in which the grape varieties grow.<\/p>\n<p>The strain was selected from Cortese grapes in the Gavi area and shows excellent suitability for the primary fermentation of quality white musts: Falanghina, Gavi, Chardonnay, Sauvignon, Riesling, Vermentino and Vernaccia.<\/p>\n<p>It has a short lag phase and delivers fast, steady and non-tumultuous fermentation kinetics, with clean and precise finishes.
